 Salads are probably one of my favorite meals in the whole entire world.  You can make them as fancy or as bare-bones as you want.  Here's a salad that YOU need to try!

Greek Salad

Are there certain foods or smells that provide you with certain memories?  For me, the smell of fresh cut cucumbers will always make me think of my sweet Lexi and Lyla.  When I was pregnant with them, I craved cucumbers all.the.time.  Pickles too.  Coincidentally (or is it), cucumbers are Lexi and Lyla's favorite food.  Cucumbers are also one of the first solid foods they ate as babies.  Ever since then, we go through about a cucumber a day with them.  

Luckily, we found success with growing our own cucumbers three years ago, and every summer since, we have been overflowing with them!  This makes me and my girls so happy.  It also makes it so easy to have a fresh Greek Salad whenever I want.

I was able to pull the cucumber, tomatoes, and pepper straight out of my garden today.  If you don't have your own organics in your background, head straight to the store and pick some up!  I piled those veggies on top of a bed of spinach leaves, along with some chick peas, green olives, and of course FETA.  Lots and lots of feta.

I also tried my hand at my own salad dressing for this fresh salad.  It ended up being Lyla approved:

Dressing Slurp

That little salad thief took off with my salad and continued to slurp the dressing until it was all gone.  So I guess what I'm trying to say is, the dressing turned out good.

Easy Greek Dressing

Ingredients:

1/2 cup olive oil

1/3 cup apple cider vinegar

1.5 tsp garlic powder

1 tsp oregano

1 tsp basil

1 tsp salt

1 tsp pepper

2 pinches of sugar

2 tsp lemon juice (or fresh lemon juice if you can)

Directions:

Combine all ingredients in an air tight container and mix.  Store leftovers in the refrigerator for freshness.
