What's For Dinner? #3

Last week's dinners were all a success! I like to try at least one new recipe a week, and last week's new recipe was the oven baked chicken fajitas. I really liked that these were baked which cut down on a lot of calories, I'm sure. Plus, Josh ate leftovers for lunch the next day. #winning

For our Friday night out meal we went to Cheddar's thanks to a gift card from my parents. Josh and I split an appetizer and he got chicken and waffles and I got the perfect chicken sandwich. It was avocado, tomato, and spring mix with grilled chicken on ciabatta bread. It was cooked perfectly! It was also incredibly inexpensive for our whole meal, always a plus.

I wonder if he'll kill me for this :)
Last night I had pasta to carb up for my long run that didn't happen (more on that another time). Tonight, Josh and I had veggie subs from Subway. I love love love these subs. I've been eating these since my pharmacy school days but I just never get tired of them. It's basically a salad on bread!

So here's what I have planned for this week:

Monday:  Tuna Ball Po-Boy with Roasted Veggies

Tuesday:  Cheesy Taco Soup and salad

Wednesday:  Crock Pot Buffalo Chicken sandwiches

Thursday:  Buffalo Chicken Flatbread pizzas with leftover chicken from Wednesday

The soup and pizzas will be new recipes this week and I can't wait to try them!  As usual, please make sure and visit the lovely Jill and the amazing Laura to see what they are cooking this week.

Do you have any meals that you could eat everyday?
I could eat black beans and brown rice every single day.  This obsession started in 1997 when I was a freshman in college at the University Of Tennessee.  Smokey's, the cafeteria in the UC served it and I gobbled it up Every.Single.Day.
