What's For Dinner #6


It's been a few weeks since I've menu planned and I am SO excited to get linked back up with Jill and  Laura.  There's only so many tuna sandwiches I can eat before I start to want a good meal!  I know Josh will probably be excited as well :)

So let's get down to business:

Monday:  Blackened tilapia tacos

Tuesday:  Sriracha Honey Cashew Chicken (new to me recipe) and easy fried rice

Wednesday:  Crock pot roast with potatoes and carrots

Thursday:  Rotisserie chicken with roasted veggies and rice

I'm also hoping to do some meal prep today for lunches.  I have some lentils and quinoa that I want to cook up to bring to work for lunch.  I'm also hoping to make my version of this new kale superfood salad that my Kroger has in the deli.  The salad has kale, edamame, cranberries, blueberries, sunflower seeds, tomatoes, and onions in it.  It is amazing but can get expensive!  Let's see if I can't recreate it!
