Happy Wednesday y'all! I don't know what the weather is like where y'all are, but it's so hot here that all I can think about is sno cones and frozen yogurt. For Realz. Unfortunately, I had neither of those today.
I started my day with my current favorite breakfast: Steel cut oats (plain), a shimmy of PB2, and a banana. I just made up that measurement of a shimmy. Basically I just shake the jar until I'm satisfied with the amount of PB2....a shimmy. You have my permission to use it in a sentence.
I'm so thankful that my techs are as in love with Starbucks as I am. Since I can't leave the pharmacy, it's nice to be able to send one of my girls off to get us the 'Bucks. My homegirl Sheena picked me up an iced coffee with soy milk and sugar free cinnamon dolce. It's my current favorite. I really wish Starbucks would start carrying almond milk. I was laying off the soy milk for a while but I'm feeling better about it since Tina @ Carrot N Cake spent some time with the Silk people.
Because I'm such a horrible boss, I later sent Sheena back out for Subway. Just kidding, it was totally her idea. It's really hard for my to deny a veggie sub. I got mine loaded with all the veggies except jalapenos and onions. I had brought an avocado from home, so I sliced that bad boy up and added it on there. Amazing. Salad on a bun.
I had a hard time deciding on an afternoon snack. Normally I go for some fruit but I wanted something salty today. I ended up getting one of the steamer bags of edamame. I guess I went all out with the soy today. Edamame is one of my favorite snacks, yet I always forget about it. So satisfying!
I had hill repeats on tap for after I got off work so I powered up with some EnergyBits. I haven't told y'all yet, but I'm a new ambassador for EnergyBits! I'll be doing a post about this soon so stay tuned. In the meantime, if you have any questions about EnergyBits, please let me know!
Oh dinner. I'm drooling looking at this picture. We had salmon grilled in foil packets, grilled zucchini, a sweet potato, and some couscous. I prepared the salmon the same way I did a few weeks back, except I also sliced some banana peppers from my garden into the packets. The banana peppers gave the salmon a little kick. For the zucchini, I just drizzled olive oil over the slices, then sprinkled some salt, pepper, and garlic powder over them. They came out so great! I can't wait to eat my leftovers for lunch tomorrow :)
